Summer Cooking – The Perfect Pesto


Welcome Blake Swihart, chef, food service professional, food photographer and recipe tester!

For the peak of the Summer, enjoy a live demonstration on pesto, covering a lot of territory with lots of tasty plates.

Class includes demonstration, meal, drinks and all service.


Lavender Pesto with Melon

Dried Tomato Pesto on Bruschetta

Cilantro Pistachio Pesto with Fresh Mozzarella & Cherry Tomatoes

Pea Pesto with Pasta

Mint Pesto with Shrimp

Putapesto with Grilled Chicken

About Blake: Blake discovered the business of food marketing after graduate school in nutrition and culinary training at the Culinary Institute of America. Eight years working with a major food marketing agency in New York City allowed him to do everything from recipe development and spokesperson touring to training seminars and food photography.

He started his own foodservice marketing company in 1985 and partnered with Kathleen Sanderson in his current company, Foodservice Solutions, in 1995. It is still going strong, designing training programs and developing materials for many consumer food and foodservice clients including recipes, videos and menu analysis. Some of his clients include:  Perdue Foodservice, Knouse Foodservice, Campbell’s Soup, USA Rice, Nutella, Bush’s Foodservice, Dannon, Silk/Whitewave and Equal Foodservice Products.

In addition, Blake gets great joy from the teaching cooking throughout the Northeast Pennsylvania and Central New Jersey area.
