Carole Murko of Heirloom Meals has been cooking gluten-free for over 10 years for her husband who has celiac disease. She, herself was just diagnosed with a rare autoimmune eye disease (posterior uveitis) which is linked to leaky gut, is on a mission to heal herself through her diet and has become a de facto expert on anti-inflammatory foods and diets.
