Sous-Chef Series: A Fall Dinner with Jack Nugent and Dave Rinaldi


Support budding talent and enjoy a multi-course dinner paired with drinks prepared by local sous-chefs Jack Nugent and Dave Rinaldi of The Proprietors Bar and Table.

A graduate of the International Culinary Center, Dave Rinaldi's second year working with Chef Michael Lascola at Proprietors Bar and Table.

Jack Nugent is a graduate of the Culinary Institute of America. He has worked on Nantucket with Chef Michael Lascola for six years, at both Proprietors Bar and Table and American Seasons.


Amuse - Pumpernickel cracker + Chicken liver mousse with shallot jam and pickled concord grapes

1st course - Fennel + Dill Lonzino w/shaved butternut candied pepitas with cranberry frisee

2nd course - Borscht + Sage Labneh with sunchoke chips and fresh horseradisH

3rd Course - Seared Bay scallops + beet tuille with smoked apple soubise and tripe-red wine jus

Palate Cleanser - Quince-Ginger Granita

4th Course - Seared Duck Breast with Hazelnut Jus, Stuffed Pasta with Duck Confit  + Golden Raisins + Fried Enoki

Dessert - Buttermilk Pie + Squash Ice Cream + Tarragon Caramel

Ticket price includes live cooking demonstration, dinner, drinks & gratuity. Limited to 24 people.
